“Mama can we please have lamb chops for dinner?” Pikelet asks wistfully in the backseat of the car. I love cooking lamb rib chops. Not only is it delicious, it’s super fast.
- 8 rib chops
- Bread crumbs with herbs (optional)*
- salt & pepper to taste
Heat oven 375 degrees F. Sprinkle each rib chop with salt and pepper and press against the bread crumbs till coated. Add a little olive oil in a non stick pan. On high heat, place each chop in the skillet about a minute on each side to brown. Finish off in the oven for 3 minutes for medium rare.
* Bread crumbs are optional. I do this sometimes to mix things up a little but if your little one is new to the taste of lamb, salt and pepper is just fine.
