“Cherries are my favorite fruit,” says my husband. It’s the height of cherry season and we’ve been buying them by the bagfuls. The IttyBittyFoodies decided to make their own raw bar version of the Cherry Ripe bar, a chocolate from Australia where my husband and I are from. But by using fresh cherries, coconut, 70% dark cacao chocolate and cashews, we’ve managed to make a healthy, guilt-free snack that everyone can enjoy. It’s so simple that my 9 year old made it from start to finish. (see the YouTube video of him making it below) Just look at his face when he got to put the cherry on top! When you let your kids cook, they feel ownership over the dish. And this 9 year old, who usually doesn’t like coconut, devoured his little bars of hard work gleefully. Oh and did I mention that Whole Foods Market is having a cherry sale $1.99 lb (conventional) right now till August 1, 2017 in DFW stores and other select regions?

Cherry Coconut Chocolate Raw Bar Recipe

Prep Time: 1 hour

Cook Time: 20 minutes

Total Time: 1 hour, 20 minutes


  • BASE:
  • 1 cup cashews (unsalted)
  • 1 cup desiccated coconut
  • 3 tbs Organic Brown Rice Syrup (we used Lundberg brand)
  • 1 cup desiccated coconut
  • 6 dates, pitted
  • 1/3 coconut oil, melted
  • 1 tsp of vanilla extract
  • 1.5 cups of cherries, pitted (Whole Foods Market sells a cherry pitter which the kids LOVED to use)
  • 150g dark baking chocolate 70% cacao


  1. In a double boiler, melt the chocolate bar. While the chocolate is on the stove, start with the base. Combine all the ingredients into a food processor and whiz for a minute or two, till the mixture starts to clump together. On a baking sheet, press the mixture to form the bottom layer. Pop the base into the fridge and check to see if the chocolate is melted. Set chocolate aside.
  2. To form the second layer, add dates, coconut, vanilla extract and coconut oil into the food processor and process for a minute. Add in cherries and whiz another minute till the cherries are combine and in small pieces. Take the base out of the fridge and add the cherry/coconut layer, spreading evenly with a spatula.
  3. To finish off, pour the melted chocolate on top and spread evenly. Put it in the fridge to set. Cut into bars with a hot knife and enjoy immediately. To store, keep it refrigerated in an airtight container.
