Easy Recipe: Capellini Pasta with Puttanesca sauce

Kid Friendly Puttanesca Sauce

Books let the imagination soar and inspire young minds. Books also encourage kids to try new foods. The IttyBittyFoodies and I are reading the Lemony Snicket series and they asked to make Puttanesca sauce like the Baudelair orphans did in the book. And they loved it!

1 packet capellini (Angel hair pasta)

1 tablespoon extra virgin olive oil

1 small onion, chopped finely

2 cloves garlic, minced

1 cup sliced olives (like Kalamata)

3 tablespoons capers

6 slices of anchovies, crushed

2 tablespoon tomato paste

1 can crushed tomatoes

6 fresh basil leaves, chiff0nade

Salt and pepper to taste



Boil pasta as per instructions on the pack, set aside.  In a large pot, over medium heat, add in 1 tablespoon of extra virgin olive oil and onion. Saute until onions are transparent. Add in garlic and cook another minute. Add in anchovies and tomato paste, stir. Then add in tomatoes and let cook for 15 minutes, simmering.  Stir in capers and olives. Adjust seasoning. Toss in pasta and top with basil leaves.
