Today is National Meatball Day and to celebrate, Chef Kenny Bowers of Kenny’s Italian Kitchen is sharing his Kenny’s Midnight Meatballs recipe with Itty Bitty Foodies. The recipe aptly named after he spent many a night making meatballs till midnight after work as a way to relax. And to show his meatball love to customers, every Sunday as well as National Meatball Day, Kenny’s Italian Kitchen  offers $1 for an order of Kenny’s 1/4 lb meatballs. Kenny’s Midnight Meatballs

12 oz (3/4 of a loaf) of white bread (Kenny recommends, pure soft white bread)

3 cups whole milk

Salt and Pepper to taste

1 cup Parmesan cheese (grated)

1 oz basil (fresh, no stem and chopped at 3/8 inches)

4lbs ground beef or pork or sausage (or a mixture)

Method:

Tear bread into small pieces, approximately 1″. In a large bowl combine milk and bread. Mix together by hand (the kids would love this part) or use a fork making sure bread is completely dissolved in milk to form a soupy paste-like consistency. Add salt, pepper, cheese, basil and mix. Refrigerate for at least 1 hour before next step.

Gently mix in meat, making sure all ingredients are evenly combined.

With slightly wet hands, form 4oz balls (we like to make ours a little smaller for the kids so roll to your desired size).

Place on a baking sheet lined with parchment paper and bake at 400 degrees for approximately 20 minutes until medium brown and internal temperature is 160 degrees F.

(Note: meatballs freeze well)

Serving suggestion: Place in a casserole dish with Italian tomato sauce, top with cheese and bake till cheese melts.
